    After you learn about the orchard and cider production processes from our tour, tasted the samples its time to sit back, relax and enjoy a drink

    Look out for speciality Cider & Perry throughout the year including Ginger Pig, Dabinett Dry, Torre 4 and many more.

    Scrumpy

    A blend of all 23 apple varieties from the orchard, fermented naturally on wild yeasts with no added sulphites or cultured yeast. The cider is neither filtered nor fined and is not pasteurised, allowing full orchard character and natural complexity to develop. Fermentation is weather-dependent and is allowed to take its time, sometimes up to six months. Once primary fermentation finishes, the new ferment is back-blended with existing stock to create a balanced, consistent product that combines bright, fresh fermentation flavours with the depth of aged cider.

     

    Sheep Stagger

    Style: Dry

    ABV: 7.4%

    A robust, bone-dry cider with assertive tannin and mild acidity. Aromas of pressed apple skin, orchard earth and a hint of hay lead into a concentrated palate of sharp apple, bitter-sweet apple flesh and a mineral finish. Long, cleansing aftertaste that highlights the farmhouse character.

     

    Farmhouse

    Style: Dry

    ABV: 7.0%

    Built from the base of Sheep Stagger with mild sweetener added to mellow the dry taste and lower the acidic feel.  Sweetener needs to be added rather than sugar due to it being a non-fermentable sugar which keep the cider traditional due to not requiring pasteurisation

     

    Medium/Sweet

    Style: Medium to sweet
    ABV: 6.5%
    Built from farmhouse with more sweetener added to mellow the medium taste and lower the acidic feel.

     

    Serving Suggestion

    Serve cool, not ice-cold, in a or pint glass to concentrate aroma and show the cider’s natural, slightly cloudy character.
